I remember when I had my iPod touch a year ago, I had an application which would "delete" (I think it just hid them until you turned them on again) default applications and I can't, for the life of me, figure out what it was called. All you had to do was open the app and select "on" or "off" for each app on your device. Anyone know what it's called? Would help out lots!

Download SBSettings and you can use that to hide the default apps with that

You can either 'poof' them from SBSettings, or simply copy them to your hard drive (computer) and then delete them off your iPod with SSH.

You can hide them like Bobby said using SBSettings. If you wish to fully delete them from the system (I highly recommend against this) you can always SSH (or use iFile or MobileFinder) and navigate to /Applications/ and delete the app itself, then respring or restart. Again, I highly recommend against deleting the applications because the only way to regain them is to restore.
