I just bought my iPad today and it appears to have 2 dead pixels. Should I be worried?

Yeah, I would take it in to the Apple store or call them and tell them about it. Make sure it's not just dust though.

Yeah I'm sure it's not dust.

Edit: What happens if I decide to keep my iPad with those 2 pixels and not get a new one?

Nothing, you would just be stuck with looking at those 2 annoying dead pixels. Just go return it and get a new one.

Yeah, if I were you I'd just return the thing. Don't be stuck with something that is less than what you paid for, it's clearly defective.

Apple has a good policy on any hardware defects that aren't caused by you; take it to an Apple store, show them the pixels, and they will replace it for you.

Same thing happened with my first 1G iPod touch. No questions asked, after they saw the three dead pixels.
