So, after the installation of Customize I decided to hide the icons for both Installer.app and the Customize.app.

Question: How would I go about bringing these icons back?

    ...lol.

SSH into Ipod, and Edit your N45AP.plist.

Can't SSH into iPod. I'm at school, can't change any WiFi settings here.
Well, unless there's another way to get around this. I tried by using a tutorial at Mac Forums using WinSCP but I always get the "Network Error: Connection Refused" after trying to login.

The YouTube video would work if I hadn't hid Installer like I previously mentioned.

So, what are my options here? If I restore my iPod and try and start fresh, will this cause any problems for me in the process?

simple. download any application launcher from the internet and put it into your ipod via ssh. now use it to launch customize.

I have both of those hidden, but thats because ive cloaked my jailbreak and theyre all stored in an invisible app after my preferences app.

and I never get rid of dock! it is important incase anything happens! (I have an invisible sunburst image if anyone wants it, so dock doesnt have to show but still works)

You know I posted a bug for Customize that they REALLY should pop up a warning when someone tries to hide Installer or Customize. Too many people do this by accident...

It amazes as to why people don't install the Dock.app, saves you so much trouble.

There are literally about a dozen ways to get out of your dilemma. Please search the forum, as I have personally answered this at least a dozen times on this forum.

And no, that's not exaggeration or hyperbole, it's understatement.

Actually, through searching I have yet to find a post that answers my question.

As I mentioned, I can't use SSH or Installer. Those are the only methods I've found during my searches.
