I was also wondering this for a while and found that if you use iFile to go through the pictures in that folder, then find the one that matches the app logo, you can find it. But i still can't find a way to replace it.

problem is that my version of stacks doesn't have an icon, it just displays the top 3 apps that are in there, which looks very ugly when i place my 'apps' stack in the dock...

You have to go to Settings > Stacks and Display As Image or something.

For your icon theming, download WinterBoard from Cydia.

Make a new folder anywhere on your computer and name it "XXX.theme", where XXX is anything you want.

Inside the XXX.theme FOLDER, make a new folder named "Icons".
Inside the icons folder, put all the icons you want to change and name them according to the way they appear on your springboard.

After that, SSH to /Library/Themes, and drag your XXX.theme folder into that directory.

Now open WinterBoard, and tap on XXX, it should put a checkmark next to it.
^ Press the home button, let it ReSpring, and youre all set.
