Custom icons in 'Settings' screen?

    I’m totally new at this, and I did do a search of the forums, but couldn’t find an answer…..

    I have a G1 Ipod touch (jailbroken); I have successfully created and installed a basic custom theme (modified unlock bar and custom icons), but I can’t figure out how (or find the answer anywhere) on how to customize the ‘mini’ icons in the sub-menus (?) such as the “settings” menu, or 'photos' menu.
    I’ve attached a couple of screenshots to clarify what I want to change… are these changes possible, and if so, where would I put the custom icons?

    I want to use the icons outlined in red:
