Are there any pros of using redsn0w to jailbreak my iPod instead of getting a custom firmware?

Um, you don't have to restore if you use redsn0w.

Redsn0w: Jailbreak over current data on iPod/iPhone
    Custom: Restore, and re-sync everything

You don't with a custom firmware either. Shift-click "Check for Updates" instead of "Restore"

    Oh, I never knew that.
I've been unjailbroken for a long time now

    What is the difference between " shift+check for updates " and " shift+restore " ?

Check for updates -- Will keep all your non-jailbreak data, just like when updating from say... 3.0 to 3.1. (but this method sometimes gets error 16XX for some people, but not me)
    Restore -- Deletes ALL DATA.

But you could always restore from backup, can't you?

Sure, but it takes a while to backup/resync a backup.
shift-click-Check for Updates is much faster.
