Developers Kevin Lo (@uhelios) and Daniel Levi (@Pix3lDemon) have created a Mac application that appears to change the carrier logo of any data-enabled iOS device, jailbroken or not. Video is below, and the page to the download is below that.

I HAVE NOT TRIED THIS! I don't have a Mac, so I cannot guarantee that it works. If some community members would like to try it out and report back here, that'd be great!
    ValleyForge and Tkf1 like this.

No Sprint support :'( Oh well, regardless this is a very neat little tweak.

Impossible; The iPod touch "carrier logo's" are stored in the Shared@2x.artwork file, instead of the filesystem. A mobile substrate tweak is the only way to do this on an iPod touch unfortunately...

It doesn't even have a carrier logo, it's just the "device name" printed out, which is in N72AP.plist. Right? I know you can change it by changing the device name in N**AP.plist (and mess some things up :p).

The iPhone carrier logo is stored in that file as well.
