Heres a free utility that I know of that can copy songs off the touch and to your PC. I have never tested it, but for those who want to try, here it is:

If anyone knows of any other alternatives, please state.

yeah, my hard drive just crashed so this was a really good idea. but i tried the program and i keep getting a message that says "your ipod is not correctly connected to your computer or it does not allow files to be written in"
so yeah...i dont know what to do from here, if i sync it to my laptop, i lose all my music and videos.

The iPod Touches don't work in Disk Mode so no programs can directly read the Library. We need the hackers to make a pseudo disk-mode by using AppleMobileDevices to read the filesystem throguh the USB cable before anything like this is possible.

I lost most of my music too and the only copy I had was in my i pod touch. So I connected to the ipod using filezilla and copied the contents of this folder to my desktop "/private/var/root/Media/iTunes_Control/Music/". This will get all your songs but the will have wired names like ACXW.mp3. If you open these files using Itunes they will come up with the correct name and copy into your library with the correct name. I takes a while to copy so I left the music downloading from the Ipod over night.

Doesn't work... still needs Disk Mounted as HD option to work and plain ol MacFuse doesn't work in fooling it.

I found an interesting item, that currently doesn't work but I've contacted the developer since it has underpinnings of the Macfuse/Macfusion suggestion that I've posted here to mount an iPod touch like a HD on a mac.

    http://www.mulle-kybernetik.com/software/iTunesFS/

is the link to the software that I'm talking about. I'll keep everyone posted if I hear more.
