The screen can scratch, but it's very hard to do so under any kind of normal use. Look up the screen scratch tests on youtube.

I read somewhere that a diamond has a hardness rating of 5
And the i pod touch has 4.5....
iPod Touch uses Sapphire Glass on it's screen which is harder than pretty much anything cept Diamond in terms of common usage. So just don't let your wife drag her rock over it and you should be set.
That being said, I have heard of people with Sapphire Glass covered watches accidentally scratching their touch.
No you can not change the volume in coverflow.
Yes, the screen can be scratched but its very hard. I put my ipod in my pocket with my keys and stuff, it didnt scratch. I put my ipod loosly in my backpack... it didn't scratch. The back will scratch easy though, which is good to have a case on it like me.
