Well before I had a 2.1 JB and I downloaded an app from Cydia.
I don't remember what the App's name was. But all you do is swipe your menu bar and a menu would come up. With processes, brightness, wifi and ssh options and some others.

This app had an option to "hide application icons"
I did so for some of the apps I use.
And now that I upgraded, those apps are still hidden.
How do I get them to show up again?

I don't want to jb my 3.0 firmware.
But if jb'ing it does then I'll do it

    SBSettings is what you had

You'll need to restore to fix it, or jailbreak and reinstall SBSettings to unpoof the apps you had hidden.

Another fix would be to COMPLETELY restore your ipod, DONT USE THE BACKUP, make it as a new ipod. Of course you'll lose contacts and all personal data, but you can resync your music, apps, movies, podcasts, back in.

    No! Don't do that!
    This should work:
    Go into settings>general>restrictions>enable restriction.
Set your password and whatnot (make sure you remember it).
You don't have to change any restriction settings.
One the restrictions are enabled, reboot.
Upon startup, go back into restrictions and disable them.
Go back to your homescreen and you should have all your apps back.
I used this because I was using Categories couldn't see my apps either. Maybe it'll work for you aswell.
