Is there anywhere I can find applications online and download them directly to my computer? I installed Mail.app using iBrickr, so I'm certain this can be done for other apps.

Aah... suckage. Google Code has a lot of apps. Just search the app name and then download it, and etc. Modmyifone's native app list has download links too.
