Don't put it into force-restore mode, put it into DFU mode.

    1. Connect iPod to dock or cable.
    2. Load iTunes (if you don't have it loading automatically when you connect your iPod)
    3. Hold SLEEP/WAKE + HOME until the iPod turns off.
    4. Release SLEEP/WAKE but KEEP HOLDING HOME for up to 15 seconds.
    5. iTunes should detect your device in restore mode. NOTE: Your screen WILL REMAIN BLANK. There will be NO "Connect to iTunes" graphic. This is normal. It means your device is in DFU mode.
    6. Shift-click "Look for Updates" in iTunes and locate your 1.1.1 update ipsw file.
    7. Downgrade.
