Mine seems a little slow compared to my 2nd generation. It's on firmware 2.1, would going to 2.2 make it any faster? And I mean slow like it would take 5 seconds to open the settings thing.

Try restoring the 1st generation one and see if it still does the same problem.

Going to 2.2 will definitely make it faster.

Solid State Drives do not require defragmenting.

Your (The) second generation iPod touch has a faster processor by more than 100MHz. It's going to be faster no matter what you do to it.

    1st Gen. iPod Touch/iPhone/iPhone3G: 412MHz
    2nd Gen. iPod Touch: 532MHz
