i've rea da million times you can't change the boot logo
but i found a .png that is the exact image
the .png is located in /System/Library/CoreServices
    and is labeled "applelogo.png
if this isn't, which i'm not getting my hopes up
    what is it?

Not sure what that is, but from my understanding to change the boot logo the FW needs to be edited. Supposedly, Winpwn can do this, but it didn't work for me, but that might be because I am using 2.1 and not 2.0

The firmware needs to be pwned along with your iPod being pwned.
QuickPwn by the Dev Team can do this for you. Visit their blog for more details and maybe some of the nice tutorials on iPTFs.

Applelogo.png appears for a split second after bootup, but the real boot logo is currently an img3 file (img2 on earlier firmwares), and you can see it for yourself inside an extracted IPSW.

As Draven and EvanXTC said, you do need to pwn to change it.
