So I have a couple of old desktops laying around, and it dawned on me to just make my own servers. The best one I have has about 256mb, and anywhere up to a 80gb hard drive.

I would definitely go with a linux distribution for my OS of choice, although Im a little confused as to which to use, as never having to use a server version instead of desktop/end user.

Obviously I need something that can run minimally, and I dont think Ubuntu server could do that very well. Ive taken a look at CentOS, but what would you recommend? Thanks.

I'd just go with an Ubuntu distro.

Ubuntu Server works well, but it can get confusing

Apache isn't a Linux distribution. A great web server, though.

CentOS is a wonderful server distro. So is Ubuntu 9.04 server.

I start off with a Desktop usually, if it's powerful enough. You could always install XFCE instead of Gnome and run very very light. And cause it's a desktop, you can access FF
