SSH is an application automatically installed (i believe) during jailbreak installation. It allows you to access your Touch directory using an ftp program like WinSCP. You need this in order to install some third party applications, like NES roms, and the Iphone Apps. SSH is a constant drain on the battery, so you can download 'services' through installer which will allow you to turn it off.
