Ok, im getting a new ipod touch and I intend to jailbreak it on FW 2.01.

I have one right now on FW 2.01 jail broken, and I have a lot of apps already on it (from cydia and installer). I dont want to go through the whole process of reinstalling everything so I would like to know whether there is a way I can backup stuff from old ipod onto my computer and put it onto the new ipod after i jailbreak it.

Also I know that I can just copy everything through ssh onto my computer from my applications folder but im looking for a better way. I mean something like using the custom payloads feature in winpwn.

Also lets say it came down to just dragging and dropping everything back into the applications folder, would cydia recognize those installer apps and allow me to modify them?
