Don't even tell me to search.

If I literally copy JUST the contents of the /Applications folder, update my ipod, jailbreak, then readd the Application folder, will my apps be restored? Do I have to backup and replace any other folders, etc?

You also have to fix permissions to 755.

Also, you would have your answer answered more quicker if you did what we didn't tell you to do.

It doesn't matter, if you move a folder from your iPod to your Computer, permissions change. If you don't change them back, your iPod cannot access them.
