No support for VOIP via iPod Touch. Sorry.
I have a Sony Bluetooth adapter thats just like that. It will not work with phone calls on the iPod Touch, just iPhone.

In order to make a call with a bluetooth headset, you'll need to make a modified version from touch mods site. (Check their wiki.)

Will it work for BT headphones? I wouldn't think a BT adapter could turn a touch into a phone but it should let you use BT headsets and remotes right?

So if someone made a VOIP app for the iPod Touch and iPhone and you connected a bluetooth headset, would you be able to use its mic?
