Hmm... They don't even mention the essentials

    .

    1. OpenSSH
    > Allows you to gain shell access to your iPod remotely.

    2. MobileTerminal
    > Allows you to gain shell access to your iPod locally.
    > I've used this to delete the contents of the webclips folder whilst I was driving (the blank icons were getting annoying lol).

    3. Backgrounder
    > Run programs in the background.

    4. hClipboard (or clippy)
    > I'm partial to hClipboard, but both allow you to use copy/paste.

    5. Lock Calender
    > Puts your calender in the lock screen.

    6. Lockdown
    > Allows you to password protect specific apps (I use it for things like mint).

    7. Dock
    > Fast application switching.

    8. Mxtube
    > Save YouTube vids.

    9. Poof / BossPrefs
    > Allows you to hide/unhide icons.

    And (of course) Winterboard.
I personally don't use QuickGold, 5 column (I'm fine with 4) or categories (Not really optimized enough).
