I know that there has been a lot of post about this problem before and that the solution is to disable the parental control through settings.
However i have a problem with that method. The settings application was inside the folder from categories and it disappeared with it... So when i jailbroke my ipod touch 1st gen again all the normal icons and applications showed up but settings isn't there... Neither was cydia or installer.

ooh bad luck - yeah you gotta disable the categories app before upgrading firmware. Restore is your only real option I am afraid, afaik

No need to restore! Just un-poof them or put them back in a category. The apps are not gone just hidden.

Edit: just noticed you said you hid cydia and installer.
