I don't know how your computer is set up, but if the service isn't started, you should be able to start it by going Start > Run, and then typing (without any quotes) 'services.msc'
On my computer, the Apple Mobile Device Service is first on the list, if you see it, click it, then in the left pane click 'Start'. I keep it stopped until I need to sync my iPod.

    Tell me if this works,

p.s. if you use Vista, press Windows Key + R to get to the run dialog.
