is there ANY possible way to use the Apple brand Headphones with Microphone and Remote with a 1st Gen Jailbroken iTouch? Like any mods to get around the problem, or is it an actual hardware difference that prevents its use?

I imagine that the headphone jack on the 3rd gen has an extra terminal (little black stripe around jack) for the microphone..... The 1st gen probably doesn't have this feature.

ah. because i just bought the apple headphones with remote and mic and even though i knew that the box said they wouldn't work with the 1st gen itouch, i figured there might be a work-around for it to work by some chance. i mean, i needed new headphones either way, so its fine if there is no way to use the mic.

no the hardware does not support it. you can't enable such features with software.

you may want to look and see if a thing such as THIS is available.

No, but something like the Macally iVoice III will work.
