I need to fix my wifi, which from what I'm being told the only way I can fix it is to restore my ipod, but my ipod is jailbroken and has apps on it, and I don't really want to have to jailbreak it again, and get all the apps, is there any way i can back it up so I don't have to do that all again?

You could transfer all your applications from /Applications/, and/or use aptbackup. The main folders that you will need to back up to retain most apps and settings are

    /Applications/
    /private/var/mobile/Media/
    /private/var/mobile/Library/

To backup through iTunes, right click on your iPod, and select "Backup".
