i am just wondering is anyone has gotten in trouble with the law, after jailbreak, posting vids etc.

Well... the law won't hold you accountable but just recently, ipodtouchmaster's account got disabled from youtube. So i guess apple and whoever apple is close to can ban accounts with videos on jailbreaking. Please Register or Log in to view images

Jailbreaking your iPod is perfectly legal, and nobody has (or can) get in legal trouble because of it.
ROMs (the games you download for the emulators) are illegal though, but there is an incredibly low chance of getting caught unless you do something stupid (like selling disks of them in front of the local police precinct Please Register or Log in to view images).
whatabout putting third party applications on it?
Third party applications are perfectly fine since the developers are releasing them for free. Getting the iPhone applications (without paying for the January update) is illegal though.
Pretty much, if the developer consents to it being free, it's fine.
