Besides Fishlabs' Rally Racing thing, are there any games that fully optimize OpenGL 2.0?

Tone it down with the exclamation points. The reason they aren't going to start pumping out games that require Open GL 2.0 is because they aren't going to exclude half of their customers. Everyone on a Ipod touch 2G or below, or iPhone touch 3G and below.

It wouldn't make sense. It'd be bad for business.

yeah thats right but like in PC where in a game u have options to change the graphics resolution and graphical stuff they can do the same thing with iphone games so ipodtouch 1g and non-3gs iphones can use the normal state and opengl 2 users can use those option to have better graphics!!!

but developers are not using it at all!!!!!!! u know what im saying its like u have something which can do more but u dont use it!!!

Adrenaline Golf is one and there are a few others, but unless your using an OpenGL 2.0 capable device (3GS or iPod touch 3G) then you wouldnt know. Like Adrenaline Golf they switch graphics engins on start depending on what device its installed on.

The reason there are not alot of OpenGL 2.0 games out yet is because its not worth it for developers to build in that support (Yet) because it takes extra time and recorces to build in the support and there are more older ipods/iPhones out in the wild than new OpenGL 2.0 capable devices. Plus the new ipods and iphone are capable of running OpenGL 2.0 & 1.0. Adding dual support just is not worth it for developers right now and with apple leaving the iphone 3G and 2G ipod touch being the cheapest option, then we probably will not see a whole lot of OpenGL 2.0 games for a long time.

Once the newer to older device ratio is reversed we will see more next level graphics games.
