To cut a long question into a short one, how do I go about installing custom thumbnail icons for applications, assuming I already have a JPG of the picture I'd like replacing it?

First, you need a jailbroken iPod or iPhone (see here if you don't). Second, you should install Winterboard from the Cydia app. Once you have Winterboard you will need to be able to SSH into your iPod or iPhone. You place the icons in /Library/Themes/YourThemeName/Icons/ as .png files with the name of the application (YouTube.png or Music.png for example).

If you don't know what any of that means, then you need to search for these things:
1-How to jailbreak your device (here)
2-How to gain access to your filesystem with SSH
3-How to use Cydia to install applications
4-How to make and use Winterboard themes

There are tutorials for all of these things on this forum, you just need to know what to search for.
Sorry if you know all of this, I can't tell how experienced you are with jailbreaking and all that.
