well, you could just SSH into it and re-distribute the apps......

Do this not sure if will work but worth a try

    1. go to installer system/dock
may ask for you to install bsd if you don't already have it install
should find it there in system where dock is

2 install dock allows you to drag the icons for access so look in the lower
right hand corner should see A LITTLE YELLOW ON THE SCREEN
just place your finger on the yellow and drag it to center all your icon should appear like
a rainbow stop when you get to customize and it will open and you can set your icon

if it not draging the first couple of times it will keep trying

Connect using putty or another SSH client and try:

to re-launch it and change the setting back.

i did the same thing bud and never figured it out, i did it two nights ago where i hid icons with the organizer (which i thought was the greatest cause all my apps were all over the place) but i got frustrated and stayed up late doing the restore and then I had to upgrande to 1.1.2 and then downgrade, jailbreak, then get back to 1.1.2 and learned about SSH and now love using that with customize in cuteftp to trick out my touch....long story short, even though i lost bookmarks and contacts...i learned a lot more than i would have....i am really pissed though cause i lost all my lockbox info so i have to find it all somewhere in emails and what not.....anyone know how to hook up the RSS reader?
