I do believe I have found out how.

Jailbroken iPod Touch 2G: Jailbreak, download iFile

In iFile, navigate to N18AP.Plist, Under
    "<key>capabilities</key>
    <dict>"

    add this under <dict>

    "<key>accessibility</key>
    <true/>"
    Then reboot your device.

I have not tested it yet, But I am almost positive it will work!

It wont. It only shows ane empty screen in settings > general > accessibility.

Its the same with voice control.

Those things are made for ARM 7. 2nd gen devices have ARM 6. Without hack000rxs skills or 229 bucks for a 4th gen itouch you wont be able to use those features.

You could try editing the preferences.app in applications, it's how I got usage and under capabilities it says arm6 change to arm7 don't know what might happen though

I got my 2G back, And that is one of the methods I am thinking of, changing it from arm6 to arm 7 might somehow fool the iPod to thinking it can handle it, but if it works, battery life may deplete.

So we have found a way to get the menu added. Now to find ways to actually add options.
