It's simple but this still requires you to have a PC to remote login on and you still need wifi to use VNC. Your title is a little deceiving...

Your ipod needs to be on a Wifi network in order to use the VNC that makes it remote-control your computer to login to your computer via SSH/SFTP.
So your ipod will need to have:
    1. Wifi access
    2. a remote computer with VNC installed
    3. and if your ipod is on a different network than your remote computer, you need to configure your firewall & port forwarding accordingly to allow remote connection. And you might need to get a no-ip address or something similar if you have dynamic ip

Eh.. I think I know what's going on, me and Delber (I assume same thing happened to him) were looking at the first video at the site linked, which was talking about SSH-ing the ipod by remote controling via VNC.

The video you are talking about is NOT about SSH-ing without wifi (the maker of the video didn't know what SSH is either)
iPhoneBrowser is like iPhuc, iBrickr, Total Commander+tpot, etc, that lets you access your ipod's file system via the USB cable.
It is not the same as SSH
(main functional difference: no changing file permission, no running commands, no need to login), tho it's a nice and quick way of adding files on the ipod.

This does not need Wi-Fi Cause if it did it's a merical I was able to trasfer themes and roms to and from my touch without a Wi-Fi router in my home.
