My iPod Touch accelerometer is not working! It works on some apps, but some of them don't work with the accelerometer. Is there a way to calibrate the accelerometer or turn it on or off? This is scaring me!

Firstly, reboot your device. You can do this by holding the power and home button simultaneously for 10 seconds. Then let us know if it is still not functioning properly.

Will I lose all of my data, including my themes and stuff?

No. Rebooting is the same as simply powering off your device, and then turning it back on (which you can do if you prefer, as you may be more comfortable doing so). It is not 'restoring' data...it's just rebooting.

Yes I did, and the accelerometer is still not working. It works on some applications, but not all of them.

If you are by any chance running iOS4 jailbroken with multitasking enabled, check and see if Portrait Orientation Lock is enabled.
