In theory, couldn't one patch a 4.1 ipsw with the previous 4.0 vulnerabilities (PDF and such)but keep the additional information? Then apply the jailbreak and then just patch the hole? Who wants to give it a try?

Apple verifies that the firmwares aren't modified.

With each new firmware update, Apple patches the previous exploit. So they have to find a new one in 4.1, which they've already done in the 4.1 betas

^ Unless it's a hardware exploit, which leaves the device pwned4life.
