I've been debating lately to myself on which one to get, the 8 or the 16gb. I'm planning to jailbreak as soon as i get my hands on one.

So far the 8gb looks reasonable since I'm only planning to put ~1.8GB of music. But if i plan to store a couple of movies, 3rd party apps, plus some breathing room space for safari web cache -- will this be enough?

If you're already paying $300...what's another 1/3 of the price for twice the amount of storage? I'd go for the 16gb.

I went for the 16GB one because:
    1) I never know what I may decide to put on
    2) If when they decide to make it disk support for Windows, I can definetly make use of the extra space
and 3) Up comes time to sell it for 2nd gen or alike, 16GB will have more re-sale-ability.

I agree with Andy, plus with all the new jailbreaked apps and such, the more space you have for apps, the better.

I'm in the tight budget at the moment so an addt'l $100 is a bit heavy. I did however heard from a friend who got a deal on 16gb for only 349.00 - i have yet to confirm that this weekend before i make a final order on 8gb.
