Didn't think it could be done?
Well, it looks like it can be, with what I suspect are some clever ASM routines in MobileEnhancer.
MobileEnhancer is part of the Caterpillar program from RiP Dev, and they now offer a free two day trial, so I decided to give it a shot after I saw that these things are now possible in 1.1.3+.
To my surprise, they actually are..

To get a correct <1.1.2 dock, switch on Reflective Dock in the Facelift section.
Summerboard causes some dock transparency problems, so if you want the exact dock, uninstall SummerBoard.
For the dock to work, replace the dock files in /System/Library/CoreServices/SpringBoard.app with these.
Also, you'll need to replace /Library/MobileEnhancer/Facelift.men/FLDefaultDockBG.png with this file. (Thanks owie007)
Don't forget to backup your 1.1.3+ ones though!
To get five icons, switch on 5-Icon Dock, obviously.

To install, add RiP Dev's source (repository.ripdev.com), go to the RiP Dev category, and then choose Caterpillar.
Start the program, select trial, and then select the features you want.
You will be able to change features from within Settings by using the RiP Dev category.
For changes to take effect, go to the Caterpillar section and choose Restart SpringBoard.

    They aren't games, just utilities.
Tapp is a command line program, UIctl is a GUI for launchctl, and XLaunch is an application launcher.
They are all by Erica Sadun from TUAW.

There's a two day trial that's completely free, they don't ask for any information.
And good luck ever getting a free version, even the guys in #iphone-dev are having a hard time wrapping their heads around the methods these crazy Russian devs are using..
