I need a quick response, so that's why I posted here rather than in the jailbreak thread.
My iPod Touch 2g (on 2.2.1 and jailbroken) stuffed up when I installed the 2.1 update for High Speed Chase.
So I thought I may as well restore to 3.0.
Anyway, my question is, would a 3.0 jailbeak be safe with iTunes 8.2.1
and redsn0w 0.7.1? If not, can you state another way of Jailbreaking 3.0?

    Of course.

    But redsn0w 0.7.1 and redsn0w 0.7.2 are very outdated 3.0 jailbreak programs.
Use redsn0w 0.8, but dont check the box that says "Install Icy"

But yeah, iTunes 8.2 and 8.2.1 work fine with jailbreak, no worries.

Great, thanks a lot for the helpful and quick response.

I just DFU'd my iPod and it came out of it 10 seconds later with the normal lockscreen and everything.
    What's up with that?

What did you do after you "DFU'ed" it?

Did you press Restore, or what happened exactly after it went into DFU Mode?

I was about to hit restore, but I got caught up in something else.
When I came back, instead of it saying that there was an iPod in recovery mode like it did
when I was about to press restore, it had the 3.0 update screen and my iPod wasn't in DFU mode.

That means your iPod took itself out of DFU Mode, as long as it restored, you should be good to go.

Although I suggest that after it restores, you put it in DFU Mode and restore again... just to make sure because when you DFU Restore you usually have little to no problems.

You should use Redsn0w 0.8 as it's more "stable"
