Well I finally bit the bullet, and jailbroke my Ipod Touch 2g for the first time. Just wanted to post my random thoughts and questions. If you have time, answer a few. I thought this would be the best approach, instead of making numerous threads. Feel free to contribute anything else you can think of.

Thanks! Loving the boards so far!

1.) Is SSH a "Must Have"? Is it difficult to use?

2.) What Add-Ons are necessities for Safari?

3.) What other apps can you recommend? (Thus far I have MXTube, MakeitMine, Fontswap, Winterboard, Icy, NES Emulator, SBSettings)

4.) Any GREAT Sources I Should add?

5.) Are there any apps available that allow me to watch Flash Video?

6.) Is there a video player available that will allow me to watch formats other than MP4?

7.) Any great Winterboard Themes? ( I am looking for something very modern, sleek, clean, and organized?)

8.) Is there an App I can use to change my Boot Logo without rejailbreaking or using Redsn0w?

9.) Can you D/L *******s, MP3, or MP4 directly to the Ipod Touch?

10.) What is your favorite thing that you can do now that your Ipod Touch 2g is jailbroken??

1.SSH is not a must have. However, I simply like being able to just drag themes in, rather than wait for it to be on cydia. SSH really isn't hard to setup. There is a guide on these forums regarding how to, with WINSCP (if you have windows anyway).
2.None. Some "good" one are MobileCinema (kinda like flash), SafariTabCloser (closes all tabs), and the SafariCookiefix thingy (fixes the cookie problem).
3.You have all the main ones I guess. gpSPhone is a Gameboy advance emulator. Rename renames apps, Logome changes boot logo (provided that you jailbroke with redsn0w 0.3 beta).
4.Add the steffwiz source, then add "All Sources".
5.None. Closest thing I think is MobileCinema.
6.Try Pwnplayer. I prefer just converting files however.
7.Tenuis is a good theme. Look around in the Theme releases section.
8.Nope. Logome is the only app, however, it needs redsn0w 0.3.
9.dTunes. It's a "free" itunes for music. It also has *******s.
    10.Themeing.

Wow, appreciate the thorough response! Anyone else? Also, in response to the question about apps, I am mainly looking for some of the lesser know apps. If you search the top Jailbroken Ipod Apps,...you get the same thing over and over.

No, don't install All Sources. It slows down Cydia a lot.
It's not worth getting, you most likely won't even use half of the stuff that it comes with.

Don't get all sources, because when Cydia crashes on you, you won't know what to do.

Any specific sources, or packages you can recommend?? I just want to have a large, versatile selection of 3rd party apps

Just YouTube or Google the apps that you are interested in. Then you can find the sources for those apps.
