Does this app from Blaze Company work? It is supposed to change your iPod's firmware tag to 1.1.3 so that iTunes will recognize it as the latest version. And if I don't need it anymore, can I just uninstall from the Uninstall section of Installer?

not true, from what i heard right now the dev teams plan is to do their absolute best to make it so 1.1.2 has ALL the features 1.1.3 has, because 1.1.3 is too difficult to hack itself...

Althouhg the dev team HAS sucessfully hacked 1.1.3, there is issues like apps dont have Root access, or alot of apps don't work anymore. ALSO they are not releasing a public 1.1.3 jailbreak guide, until the february SDK, so that apple can't figure out how they exploited it, and fix it in the update that the SDK will bring.
