Appman has put together a helpful guide to theming Notification Center in iOS 5. Since Winterboard doesn’t yet support the latest version of iOS, you’ll have to edit the files manually. Here’s how:
Having trouble theming the new NotificationCenter in iOS 5? Well no worries, I’ve got you covered.
First off, WinterBoard is not officially supported for iOS 5 via a Cydia update yet, so you’ll need to manually theme.
1. Go to: System/Library/CoreServices/SpringBoard.app
And find: BulletinListLinen@2x.png
2. Once found, you can either create your own background, or add an image. Just make sure it is 960×480 for best results. Name it BulletinListLinen@2x.png. Make sure you back up your original if you ever want to change back.
3. Drag and drop your new image into System/Library/CoreServices/SpringBoard.app and overwrite the original file.
In the betas, you could just stick the image in SpringBoard.app and you would be fine, but Apple has done something similar regarding the linen, like they did with Folder linens in iOS 4. This requires you to delete some cache files.
5. You need to navigate to var/mobile/Library/Caches and delete the “apple.SpringBoard.notificationCenterLinen” file.

After deleting apple.SpringBoard.notificationCenterLinen, my background worked perfectly.
